Seattle institution Canlis, founded in 1950 by Peter Canlis and later taken over by brothers Mark and Brian Canlis in 2005, is now entering a new chapter. Known for its upscale dining experience, the restaurant made waves with a nacho cheese fountain party hosted by the brothers, signaling a shift towards a more modern and inclusive approach to hospitality.

After nearly 20 years together, Brian is leaving Canlis and heading to Nashville to embark on a new project with his friend, Will Guidara. Each chef brought their unique culinary influences, resulting in accolades and recognition for Canlis.

As Canlis approaches its 75th year, the brothers are reflecting on the restaurant’s legacy and its future. Mark is searching for a replacement for Ibrahim while contemplating the future of the restaurant. His dedication to hospitality and openness has been a guiding principle in their management style, allowing the staff to grow and move on when necessary.

Despite uncertainties, the Canlis brothers remain optimistic about the restaurant’s future and are committed to maintaining its ethos while embracing change. As they prepare for the next phase of Canlis, they are confident that the restaurant’s legacy will continue to thrive under Mark’s leadership.
