Seattle institution Canlis, founded in 1950 by Peter Canlis and later taken over by brothers Mark and Brian Canlis in 2005, is now entering a new chapter. As Canlis approaches its 75th year, the brothers are reflecting on the restaurant’s legacy and its future. Mark is searching for a replacement for Ibrahim while contemplating the future of the restaurant.
